Go into any big-box store and grab a bag of coffee. Chances are, it’s commercial grade. What does that mean? It means the coffee is, frankly, commodity stuff. It was bought and sold on volume, where the priority is keeping the price low, not maximizing the flavor.
This coffee is often over-roasted (burnt) to cover up defects, or it’s simply stale. The harsh truth is, it’s coffee that was allowed to sit around and get old.
You’re an entrepreneur; you wouldn't let a product sit in a warehouse until it loses all value, so why accept that from your coffee?
Our Standard: The Stubborn Quest for "Specialty"
At Stubborn Bean Coffee, we only use Specialty Grade beans. This isn't a fancy marketing term we slapped on the bag; it's a verifiable score.
Coffee beans are evaluated by certified quality graders (Q-Graders) and are scored out of 100. To be considered Specialty Grade, a bean must score 80 points or higher. It must be virtually free of defects and possess distinct, unique attributes like flavor, acidity, body, and aroma.
In short: It’s the highest quality, most carefully handled coffee on the planet.
Freshness is Non-Negotiable
A high-score bean is the starting line, not the finish. The second rule of quality is freshness.
Coffee is a perishable product. Once roasted, the clock starts ticking. The beautiful, complex flavors you paid for begin to degrade rapidly. If you buy a bag that was roasted last month, you are literally drinking lost potential.
That's why our Roasted to Order standard is so crucial. We don't have bags sitting on a shelf waiting for you. We wait for your order, then we put the beans in the roaster. This ensures that when that bag lands on your counter, it is at its absolute peak.
It takes a little extra effort and a lot more stubbornness on our part, but that's the only way to deliver the quality you deserve.
